VAN DIERMEN BRAND CREAM PUFFS WITH
MOCHA SAUCE

Our Van Diermen Cream Puffs are certainly rich and flavorful, but with homemade mocha sauce they are unbelievable. Our cream puffs are made from real, fresh whipped cream and not fake “creme” made from oil, or filling made from butter, like other brands. Therefore, they deserve the best quality topping. Although there are many commercial mocha sauces available, we doubt any are even close in quality to this easy homemade version.


INGREDIENTS

4 dozen Van Diermen Dutch Mini Cream Puffs
6 tbsp brewed coffee
3 oz semisweet chocolate, chopped
3/4 tsp genuine vanilla extract
1/4 tsp cornstarch
1/2 tsp granulated sugar
Pinch cinnamon


Makes 9 tablespoons (about 3 servings).

PREPARE THE CREAM PUFFS

Place frozen puffs in their individual serving bowls or plates. Do not refrigerate. Allow three or four per person, or more if you wish. Begin to prepare the mocha sauce as soon as the puffs are in the dishes.

MOCHA SAUCE

Combine all ingredients in a small saucepan and cook, whisking over moderately low heat until smooth and thickened (about 2 minutes). Remove from heat and cool to warm before serving over cream puffs (thawed or semi-frozen).

Cook’s note:

Sauce may be made 2 days ahead and kept covered at room temperature. Reheat before serving.
